Smoked Chicken Sliders!
All so I have been slacking off a little this weekend. Here is something that you can do with those roasted chickens in the store or do your own for a great fresh flavour.
Ingredients:
1 whole roaster chicken
1/2 cup brown sugar
1/4 BBQ rub
Mini hamburger buns
Cheese, jalapeno, BBQ sauce or any other condiment that you enjoy
Method:
Place chicken, sugar, and BBQ rub in a ziplock bag and let marinate in a fridge for 6 hours
Place on smoker or BBQ or Oven at 250 degrees and let cook slowly until internal temperature reaches 180 degrees (about 5 hours)
Shred chicken from the bones
Dredge chicken in BBQ sauce and place on buns
Served with baked bean and cole slaw

Caramel Pecan Squares!
Here is a very tasty dessert, but I must warn you pecans are not cheap. You may want to try peanuts or walnuts instead if you do not want to spend the money on the pecans.
Ingredients:
3 cups chopped pecans
2 cups flour
2/3 cup powdered sugar
3/4 cup cubed butter (cold)
1/2 cup brown sugar
1/2 cup honey
2/3 cup butter
3 tbsp whipping cream
Method:
Preheat oven to 350 degrees
Toast pecans in oven for approx 10 minutes
In a mixer with the paddle attachment blend flour, cubed butter, powdered sugar
Mix until a crumb mixture is made
Press crumb mixture into a 9 x 9 pan
Bake for 20 minutes until edges are browned let cool in pan
Bring brown sugar, honey, 2/3 cup butter, and cream to a boil
Add toasted pecans and stir
Spread the hot mixture on to the crust
Bake for 30 minutes and allow to cool before serving

Focaccia Bread!
I though this had gone through last night but when I logged in today it had not been sent through.
So I will try this again. A very simple bread to add to any pasta meal, or bread basket.
Ingredients:
1 ball fresh pizza dough
1 tbsp basil
1 tbsp oregano
1 tbsp sea salt (I had red Hawaiian on hand so that is what I used)
Olive oil
Method:
Preheat oven to 450 degrees
Bring pizza dough to room temperature before using (about 20 minutes from the fridge)
Line a cookie sheet with parchment paper and drizzle olive oil over the paper
Place dough on the parchment and begin to stretch to fit the cookie sheet
Sprinkle basil, oregano, and sea salt on the dough drizzle more olive oil on the top of dough
Bake in oven until golden brown approximately 15 minutes

Fresh Talapia!
The great market that I have been getting the pork bellies for the bacon from had live tilapia. Could not pass at the chance to BBQ up some of these. The butcher pulled one out of the fresh salt water tank and de boned and filet one of the fresh fish for me.
Ingredients:
2 tilapia filets
juice of one lemon
1/4 tblsp crushed garlic
salt and pepper
Method:
Preheat BBQ to high
20 minutes before cooking mix lemon juice, garlic, salt and pepper
Pour mixture over the fish
After 20 minutes of the fish sitting in the marinading liquid place fillets flesh side down on hot grill
Turn fillets a quarter of a turn, after 2 minutes of cooking
Place a piece of tinfoil on the grill where there is no heat
Flip tilapia on to tinfoil so that skin is touching the foil
Close lid of BBQ and let cook for 5 minutes
Remove from grill and serve
Pan Baked Potatoes!
Sorry I missed yesterday but this should make up for it. We have been trying to use up what ever is in the fridge lately, these potatoes came to mind when I was looking in the fridge.
Ingredients:
6 small white potatoes
3 strips bacon
1/2 small onion sliced
2 tbsp bacon fat
1/2 cup shredded mozzarella cheese
Method:
Preheat oven to 450 degrees
Place potatoes in a pot of cold water and bring to a boil
Let potatoes cook for 10 minutes
Run cold water over potatoes to stop cooking
Slice potatoes into coins
Fry bacon in an oven proof pan
Take cooked bacon out of pan leaving grease in the pan
Layer potatoes, bacon, and onions alternating until all potatoes are in the pan
Put pan in oven and let cook for 20 minutes
After 20 minutes of cooking sprinkle cheese on the top of the potatoes and let melt and brown
Divide on to plates

Stuffed Peppers!
Just getting rid of the leftovers in the fridge. Filling peppers with any leftovers help save money and time and give you a great new idea.
I made this on the big green egg but can also be dine on the BBQ or in the oven
Ingredients:
2 red peppers
1 handful of pulled pork
4 tblsp smoked beans
4 tblsp BBQ sauce
1/4 cup shredded cheese
Method:
Preheat oven to 425 degrees
Cut the top off of peppers and clean out seeds and white parts, making sure not to pierce through peppers
Stuff half the pork in each pepper
Place 1/2 of the beans on top of the pork
Put half of the cheese on each of the peppers
Drizzle each pepper with BBQ sauce
Cook for 10 – 15 minutes

Beef and Broccoli!
There is no need to order out, here is a really good and quite easy oriental recipe. The key to this recipe is to have everything ready before you start to cook. This recipe happens quickly so make sure you have each step ready to go before you start cooking.
Ingredients:
1/2 lb of flank steak
2 tbsp cornstarch
4 tbsp soy sauce
2 tsp sugar
5 tbsp peanut oil
1 tbsp oyster sauce (vegetarian oyster sauce can also be used)
1 1/2 cups chicken broth
1 head broccoli
1 onion sliced
1 red pepper sliced
2 tomatoes 1/4erd or more depending on the size
2 tsp crushed garlic
Method:
Wisk 1 tbsp cornstarch, 3 tbsp soy sauce, 1 tsp sugar, 1 tbsp peanut oil and add the slice steak. Place in fridge until ready to use
Mix 1 tbsp corn starch, 1 tbsp soy sauce, 1 tbsp oyster sauce, and 1 1/2 cup chicken broth and set aside
Heat 1 tbsp of peanut oil
Cook vegetables for 5 -6 minutes
Remove vegetables from pan
Add 1 tbsp of peanut oil to the pan and let heat up
Place beef and liquid in to pan
Allow to cook for 4-5 minutes
Add the sauce that was set aside and let cook for 2-3 minutes
Add vegetable back to pan and let cook for 4 minutes
Let everything cook in pan for 3-5 minutes
Place on top of cook rice and serve
